Most of us are hard pressed for time, or do not want to spend lots of time cooking. Cook smart. Pick one main thing to cook, in most cases it's the meat or main dish. Keep your side veggies simple. I almost always serve my veggies raw or quickly steamed for 4 minutes in the microwave. This will also train your and your kids' palate to taste and appreciate the natural sweetness of the veggies. Try it! You will taste the sweetness. If you prefer, drizzle some olive oil over, plus salt and pepper. Or drizzle melted coconut oil or butter. Keep additional cooking to weekends when you have the time :-)
